1/3 cup of finely chopped parsley
1 chopped medium size onion
1 tbsp minced garlic
¾ cup of parmesan cheese
½ cup of bread crumbs
2 tablespoons of milk (enough to moisten the mixture so it molds easily)
2 teaspoons salt (or salt to taste)
1 teaspoon pepper (or pepper to taste)
1 tablespoon allspice
8 cups of vegetable broth
2 cans of white beans
2 cans of red beans
1 tablespoon of minced garlic
1 cup of diced celery
2 cups of macaroni noodles
2 tablespoons olive oil
Salt and pepper to taste
Parsley for garnish
Add all ingredients into a bowl and mix well with your hands. Then roll the meatballs into small balls and put in the oven for 15 minutes at 400 degrees. Then turn them over once and leave them in the oven another 10 minutes. Take them out and let them rest.
In a large pot, fry onion, celery and garlic in olive oil over medium heat.
Add vegetable stock salt and pepper. When stock boils add pasta and let it boil for 10 minutes.
Add beans and let simmer on low heat for 20-30 minutes.
Add meatballs to soup. You can also make a meatball sandwich or sub to go with the soup!
