Quick and Easy Chicken Fried Rice

What’s better than finding a recipe that's tasty and convenient when you’re just in mood for a no fuss dinner? Not much, and you’re in luck with this week because we’re bringing you a chicken fried rice recipe that is fast, flavorful, and is the perfect use for any leftover chicken or rice you may have in your fridge from dinners past. Even if you’re making this fresh, it’s still done in no time so you can spend less time cooking and more time enjoying a home-cooked meal after a long day.

For our purposes, we didn’t have any leftovers on hand, but if you happen to have made a recipe recently that left you with extra chicken, rice, or both then congratulations, half of this recipe is already done! Otherwise, this is a quick and easy recipe, with minimal prep, and can be made in a single large pot. I mention this up top because we started ours in a large pan that, try as it might, simply wasn’t large enough to hold everything and we ended up switching to a Dutch oven near the end. So, save yourself the trouble, and the extra dish, and work in a large pot from the start!

As far as ingredients are concerned, we kept ours simple with a few key ingredients like onion, chicken, carrots and peas, and white rice. As for spices, it’s even simpler with just salt, pepper, and soy sauce, and these can all be used to your taste, so season away and taste it throughout to make it as seasoned as you want. We also used Sno Pac organic peas and carrots in ours, and these were great added from frozen and heated through, keeping this recipe quick and convenient with no extra cooking needed.

This recipe really can be that easy. If you are using leftover rice or chicken, there isn’t much that actually needs cooking. And if you’re making everything fresh, even then the recipe is done quickly with elegantly simple instructions that let you make it how you like. In the end, you’ll have flavorful rice and veggies with tender chicken that goes great as a side like you might expect from Chinese takeout, or on its own as a simple dinner for a busy night when making a complex recipe isn’t a priority.

Ingredients

  • 1-1.5 lbs Halal chicken breast
  • 1 package Sno Pac peas and carrots
  • 3 cups cooked white or brown rice
  • 3 green onions, diced
  • 1 yellow onion, diced
  • Peanut oil, about 2-3 tbsp
  • 2 cloves garlic, crushed
  • 2 eggs
  • Soy sauce, to taste
  • Salt and pepper, to taste

Directions

  1. Slice the chicken into bite-size pieces, season with salt and pepper, and cook in a large pot or Dutch oven over medium heat in 1 tbsp peanut oil. Then remove the chicken from the pot and set aside.
  2. Cook the onion in 1 tbsp of peanut oil until it begins to soften, then add the green onion, peas and carrots, and garlic. Mix until soft and the garlic is fragrant. Push the veggies off to the side or clear a space in the middle of the pot.
  3. Cook the eggs in the space and scramble in with the veggies. Add the rice and chicken. Season with salt, pepper, and soy sauce to taste, and mix until everything is evenly incorporated. Serve and enjoy.
