Quick and Easy Chicken Katsu Ramen

We’re no strangers to a great ramen, we have another delicious recipe here, but what sets this one apart is the perfectly crispy chicken katsu that’s the star of this recipe. We wanted our breading extra golden-brown and crispy, so we gave the panko a quick toasting in a pan before mixing in a few seasonings. This is an easy way to go the extra mile for crispier and more satisfying chicken.


We also wanted our chicken to bake quickly so we sliced it into thin fillets and pounded it even flatter. Then it’s the standard affair of dredging it in egg, coating it in breading, and laying it out on a baking sheet for a quick trip to a hot oven. Simple as can be and you can make the ramen while it’s in, so it all comes together at the end.


The chicken is great on its own, but if you’re looking for even more flavor then we also have a savory sauce to go with it. You could go with the classic soy sauce, but we wanted to cut ours with a bit of hoisin sauce as well. Soy sauce is a classic that’s great on any number of East Asian dishes, but it’s a distinct flavor than can be overpowering in large amounts, but with a lil’ bit of hoisin, it stays savory without getting overpowering!


As for the ramen, we kept it super simple; a couple packages of ramen in boiling water, a few green onions, and ramen seasoning and mix it all together until nice and tender. Ramen is meant to be easy, so we kept it easy! Ramen noodles are done in no time, so you can get these going while the chicken bakes.


When it’s all said and done, serve the ramen with the green onion and the chicken topped with some of the sauce, and we included some corn and a hard-boiled egg to round out that authentic ramen experience. This is a super simple way to upgrade your regular ramen recipe, give it a try for yourself, nothing warms the body and soul during winter quite like a hot bowl when the craving strikes.

Ingredients

  • 1 lb Halal chicken breast
  • 2 packages storebought ramen & seasoning
  • 1 tbsp neutral oil
  • 1 ½ cups panko breadcrumbs
  • 1 ½ - 2 tbsp onion powder
  • 1 ½ - 2 tbsp garlic powder
  • Salt and pepper
  • 4 tbsp hoisin sauce
  • ¼ cup soy sauce
  • 2 green onions
  • Eggs, 1 beaten and 1 hard boiled for serving
  • Sno pac corn, for serving

Directions

  1. Slice the fat of the chicken, slice the breast in half, and pound the halves into flat fillets. Heat the neutral oil in a pan over low heat and add the panko, mix and toast until golden brown and remove from heat. Season the breadcrumbs with the garlic powder, onion powder, and salt and pepper in a large mixing bowl.
  2. Lay out a lined baking sheet and spray with nonstick spray. Beat an egg in a mixing bowl and dredge the chicken in the egg and coat evenly with the panko mixture on all sides. Lay the chicken out on the sheet and bake at 425 for 10 minutes, or until cooked thoroughly and it reaches 165 degrees internally.
  3. Mix together a sauce for the chicken by combining the hoisin and soy sauce in a mixing bowl and set aside.
  4. For the ramen, slice the green onions into 1 inch pieces, add 2 packages of ramen to boiling water until tender, then mix in the seasoning and green onion until fragrant.
  5. Serve the ramen with corn, a hard-boiled egg, and the chicken topped with the sauce.
