Summer’s about to come to a close, but there’s still time for one last backyard grilling blowout as a chance to get together with friends and family for grilled favorites and fun in the sun. But as good as a grilled Halal frank or burger is, they tend to look a little lonely on a plate without an equally great side to go with them. Fortunately, today’s recipe is for exactly that, but one side ain’t enough, and two is too few, so we’re bringing you 3 amazing recipes for Halal sides that are perfect for your next cookout to end summer in style! We’ll start with simplest of bunch with this pickleback coleslaw recipe. It’s a standard slaw but that doesn’t make it any less delicious, a simple blend of diced cabbage, apple, and carrots all tossed in a cool and tangy dressing that is the perfect crisp and refreshing side to beat the heat at any barbecue. But as the name implies, there’s gotta be some pickle in the mix and that comes in the form of a few tablespoons of pickle juice added to the sauce, just enough to add just that little bit of extra tanginess to go with some of the more savory flavors that are cookout favorites. This recipe’s done in no time with no cooking required, just prep the greens and fruit for the slaw and mix the sauce together. If you want to keep everything at maximum freshness once it’s chopped, keep the greens and apple in bowls of cold water and pat them dry when you’re ready to get mixing, and once it’s all done, just keep this side refrigerated and it’ll be a cool compliment to any dish at the cookout.

On to another cool summertime favorite side, this potato salad is a personal favorite and a barbecue classic, and for good reason. Served chilled with tender potatoes and veggies in a creamy sauce, this is a quintessential summer side. This one requires a little bit of cook time, just enough to boil some potatoes to get them nice and tender, and this gives you the time to prep the other veggies and make the sauce that makes this salad so delectably creamy. And in true Midamar fashion, we had to add our own twist to the recipe, so we added our own jumbo campfire grillers and beef bacon to the mix to make this a deliciously meaty mix that’s like a side and a barbeque all in one! Giving the chunks of meats time to fry in a pan gives the bacon time to cook through, then cooking everything else in the drippings infuses it all with amazing smokey flavor and ensures no part of it is lacking in amazing barbecue flavor that is also deceptively complex as the brown sugar mixed in with the beans and sauces adds a little bit of sweetness to cut what would otherwise be a very savory dish. All of this is done with just a few dishes like a pan to cook in and an oven safe baking dish or tin it will all get mixed in when it’s ready to finish up in the oven for a few minutes. And when those few minutes are up, this is a great side to serve up hot with the rest of the cookout and is great on a plate with the other sides in this recipe.

Ingredients

  • 2 Granny Smith apples
  • 1 green cabbage
  • 1 red cabbage
  • 10oz sliced carrots
  • ½ cup mayonnaise
  • 2 tsp sriracha
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 3 tbsp pickle juice
  • Salt
  • Pepper
  • 3lbs potatoes, peeled
  • 2 celery stalks
  • ½ yellow onion
  • 6 hard boiled eggs
  • 1 ½ cup mayonnaise
  • 2 tbsp sugar
  • 2 tbsp white vinegar
  • 2 tsp garlic powder
  • 2 tbsp mustard
  • Salt
  • Pepper
  • 2 packages Halal jumbo campfire grillers
  • 4oz Halal beef bacon
  • ½ yellow onion, diced
  • 1 cup BBQ sauce
  • 1 cup ketchup
  • 2 cans cannellini beans
  • 1 cup brown sugar

Directions

  1. Peel and slice the apples into thin strips and finely chop the cabbages. Keep them fresh in bowls of cold water until use
  2. Make the sauce by mixing the mayo, sriracha, vinegar, mustard, and pickle juice in a mixing bowl.
  3. Pat dry the cabbage and apples and mix in a large mixing bowl with the carrots, add the sauce and mix until evenly coated, adding salt and pepper to taste. Refrigerate until served.
  4. Slice the celery stalks and dice the onion and potatoes into small pieces and finely dice the hard-boiled egg. Boil the potatoes for 10 minutes, until tender, then remove from heat, drain, and let cool.
  5. Make the sauce by mixing the mayo, sugar, vinegar, garlic powder, and mustard in a mixing bowl.
  6. Add the potatoes, celery, onion, and egg to a mixing bowl, pour in the sauce and mix until evenly incorporated, adding salt and pepper to taste. Refrigerate until serving.
  7. Slice the campfire grillers and beef bacon into small pieces and add to a pan. Cook over medium heat until bacon is cooked thoroughly, and grillers are heated through. Remove from heat but leave the drippings in the pan.
  8. Add the diced onion and stir until it begins to soften. Add the BBQ sauce, ketchup, beans, and mix. Stir in the brown sugar, mix again, and bring to a simmer.
  9. Pour the mix into an oven safe baking dish or tin, add the grillers and bacon, stir, and bake at 300 degrees for 15 minutes. Serve with the other sides and enjoy!
