4th of July Meatloaf and Mashed Potatoes

If you’re celebrating the 4th of July with friends and family then you’ll need a recipe that’s perfect for feeding plenty of hungry guests, and what’s better than the American comfort food classic Meatloaf and Mashed Potatoes? The meatloaf itself is tender and delicious as always, and made even better with creamy mashed potatoes but in celebration of such a momentous anniversary we had to add a little twist and make an America shaped meatloaf with an ocean of mashed potatoes! It was perfect for serving the whole Midamar office, so it will perfect for serving all your hungry guests.

 

Like any good meatloaf, it’s a few savory seasonings and chopped onion mixed into some Halal ground beef from Midamar. Here's a handy tip when making anything with seasoned ground beef; break off a little piece when you think you're done seasoning it and pan fry it to taste test. You don’t want to cook the final product only to find that it’s under seasoned, so this gives you the chance to make adjustments before you commit. 

 

The 250th birthday of the United States gave us the unique opportunity to have some fun with this recipe. A goofy novelty though it may be, sculpting this meatloaf into the shape of the US was fun to mess around with, was good for a few laughs, and serves as a little geography lesson for those that needed to refresh their memory. And worry not, we’ve got all 50 beautiful states on here, including Alaska and Hawaii.

 

While the meatloaf is baking, we made a big pot of mashed potatoes, enough to adequately complement such a large amount of meatloaf. Everybody has their own favorite way of making mashed potatoes, and the one that we’ve used in a few recipes before, is much the same but with one special secret ingredient. Chive and onion cream cheese mixed into the potatoes. This not only makes them creamier and smoother, but it also adds the delicious savory flavor of the cream cheese, and that’s always a welcome addition.

 

When the potatoes are done and the meatloaf is cooked through, we gave the top if it a brush with the classic sweet and tangy meatloaf sauce and tossed it back in for a few minutes to finish cooking over the top.

 

It’s hard to go wrong with a good meatloaf recipe, it’s got all the savory and beefy flavor with a little bit of sweet and tangy sauce that we love, and serving it with homemade mashed potatoes is a simply unbeatable combo. 4th of July Meatloaf and Mashed Potatoes

What's a better way to celebrate the 4th of July than with a classic American recipe that's perfect for serving hungry friends and family? This meatloaf recipe is plenty of Halal beef, perfectly seasoned and served with creamy homemade mashed potatoes for a fun and festive feast for the 4th!

Ingredients

  • 5 lbs Halal 93% lean ground beef
  • Sno Pac Mixed Vegetables
  • 2 yellow onions, diced
  • 2 cups old fashioned oats
  • 1-2 tbsp salt
  • 1 tbsp pepper
  • 1 ½ tbsp diced garlic
  • 2-3 cups ketchup
  • 1 ⅓ cups ketchup
  • 2 tsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tsp pepper
  • ½ tsp salt
  • 1 ½ tbsp garlic powder
  • ½ tbsp onion powder
  • 4 tbsp brown sugar
  • 7 lbs golden potatoes
  • 2 tbsp butter
  • 2-3 7.5 oz tubs chive and onion cream cheese
  • Salt to taste

Directions

  1. Start the meatloaf by dicing the onions and blending the oats in a food processor until finely chopped. Add the ground beef, salt, pepper, diced onion, half of the oats, and 2 cups of ketchup to a large mixing bowl and mix until combined.
  2. Take a small piece of the meatloaf and pan fry it until cooked through, then taste test it and adjust the seasoning of your meatloaf as needed. We added the rest of the oats, 1 more cup of ketchup, and another ½ tbsp of salt. The more oats used, the more held together your meatloaf will be. 
  3. Lay out a large baking sheet lined with parchment paper and add large handfuls of the meatloaf to the center, then roughly start sculpting the meatloaf into the shape of the United States, starting from the inside out and adding details as you go around the edges. Add more meatloaf mix throughout this step as needed to create the desired shape. Don't forget to make Alaska and Hawaii! This may require another baking sheet. 
  4. Mix together the ingredients for the glaze in a mixing bowl until combined, then bake the meatloaf at 350° for 45 minutes until cooked through. While it bakes you can start boiling your potatoes for the mashed potatoes.
  5. Peel 7 lbs of golden potatoes and slice into chunks, then boil in a large pot until tender, or about 30 minutes. When the meatloaf is baked, remove it from the oven and paint the top with a thick layer of the glaze, then bake for another 15-20 minutes until it becomes glossy.
  6. Drain the potatoes and pour them into a stand mixer. Mix on low speed until potatoes are slightly mashed. Add 2 tbsp unsalted butter and mix until melted and combined, wiping down the sides of the bowl periodically. Add 2 tubs of the chive and onion cream cheese to the bowl and mix until incorporated then taste test. Add additional salt and chive and onion cream cheese until it is to your tastes. 
  7. Remove the meatloaf from the oven and carefully cut off the parchment paper around the edges. Then fill in the empty space on the pan with mashed potatoes, serve with the mixed vegetables and enjoy!
