Creamy and Zesty Cajun Chicken Pasta

Just when you think you’ve enjoyed every flavor pasta has to offer, someone comes up with a new way to enjoy a beloved dinner favorite. Variety is the spice of life, so if you’re tired of the classic marinara or alfredo and are looking to try something with a little more zest, then we have a Cajun Chicken Pasta recipe that is just the thing for you! With tender pasta, juicy chicken, and fresh veggies, all southern seasoned and in a decadently creamy sauce, what’s not to love?!

Like a lot of pasta dishes, you don’t need much more than a single pot for this, so even as you add and remove things as they cook, all the great flavors get to come together. And speaking of flavor, what really sets this recipe apart from other, more traditional pastas, is that Cajun flavor you came here for. We seasoned our chicken with a Cajun seasoning blend that was the perfect mix of a little bit of spice, a little smokey, and a lot of fantastic zesty flavor that makes the whole dish pop. This zest goes great with the tanginess of the red and green bell peppers sliced throughout for a fantastically flavorful dish.

We seasoned the peppers in the pot with Cajun seasoning too that made the cream sauce that much more flavorful when that got mixed in with the veggies as they cooked. Like any good cream sauce, the secret is to use freshly shredded cheese to ensure it melts correctly without getting clumpy and mixing it into the simmering cream in batches to make a smooth and creamy sauce. This is perfect for mixing the cooked pasta and chicken back into, coating everything in that zesty and rich flavor. And that’s all there is to it! Like I said earlier, once everything’s cooking in a large pot, you’re off to the races and it’ll be done before you know it. You can cook the pasta in a separate pot while making the sauce, saving you even more time, and skipping close to when you get to enjoy this dish.

What a dish it is. I’m a sucker for creamy pasta, and this comes with additional Cajun flavors that were a delight on top one of my favorite meals. The chicken is juicy, the veggies are tangy and just the right amount of crisp, and the sauce is rich and creamy and ties the whole thing together. Ingredients

  • 2 lbs Halal chicken breast
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 large yellow onion
  • 4 tbsp butter, divided
  • 4-6 tbsp Cajun seasoning, divided
  • 2 tsp smoked paprika
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • Salt and Pepper, to taste
  • 1 cup heavy cream
  • 1 cup freshly shredded parmesan
  • 1 lb penne pasta, cooked

Directions

  1. Slice the chicken breast into bite-size pieces and season with half of the Cajun seasoning and salt and pepper, mix until each piece is evenly coated and set aside. Slice the peppers and onion into thin strips and set aside.
  2. In a large pot over medium heat, melt half of the butter and cook the chicken thoroughly, then remove the chicken from the pot and set aside. Melt the rest of the butter in the pot and cook the peppers and onion until they begin to soften. Now’s a great time to start cooking the pasta in a separate pot.
  3. Season the veggies with the Cajun seasoning, smoked paprika, dried basil, garlic powder, and salt and pepper then mix until evenly coated. Add the heavy cream and bring to a simmer.
  4. Mix in the parmesan in batches, mixing throughout, until melted evenly and the sauce has thickened. Add the cooked and drained pasta and the chicken and its accumulated juices. Give a final mix until everything is coated with the sauce, serve and enjoy!
