Chicken Chop Suey: Amazing Flavor Made Convenient

It’s hard to beat a good stir fry, fresh veggies and your favorite protein in a flavorful sauce hits the spot when you’re looking for a meal that’s as tasty as it is convenient. We love it, and that’s why we’re excited to bring you a deliciously Halal Chicken Chop Suey this week that hits all the right notes that make this dish a worldwide favorite!

 

Preparing for Success

Chop suey is meant to be made with “odds and ends”, all the extra things you may have taking up space in your fridge, all mixed and fried together for a simple and tasty meal. In that spirit, we used a mix of a few simple veggies, carrot, celery, and mushrooms, with some bok choy for some more fresh flavor, and added authenticity to the dish. This is a great excuse to use those leftover veggies you have lying around and need to use, just chop them up now to toss them into a pot or wok later.

Fresh veggies are always made better when paired with your favorite tender and juicy chicken. This just needs chopped into pieces before getting mixed into a marinade and set aside for a little bit.

No need to worry about doing it overnight or early in the day for dinner, just mix up the marinade and the chicken until it’s nice and coated, finish the rest of the prep, mix together your sauce, and you’re ready to get cooking.

 

It’s All Coming Together

We started by pan frying our chicken until each piece was golden brown and had a crispy crust on the outside. If you have a wok then absolutely use it, otherwise we recommend using a large pot to cook everything in. We started with a pan and needed to transfer over to a pot when we started on the veggies, this was a simple fix but we lost out on some great chicken flavor from the pan!

As with any stir fry, there isn’t much to the cooking aside from simmering everything together in the sauce so all the flavors can come together. The denser veggies like carrots and celery should go in earlier to start to soften, followed by the softer ones like the bok choy leaf and snow peas so they don’t over cook and get too soft.

When the sauce has thickened a bit and everything is evenly coated in its great flavor, you’re ready to serve this up with some rice and it tastes amazing paired with Kaiser Spring rolls that you can find here.

 

A Simple Recipe For A Complex Meal

A simple recipe doesn't have to mean simple flavors. This Halal Chicken Bok Choi is a simple blend of fresh ingredients, cooks in no time, and still gives you a meal that is rich, complex, and a delight to enjoy.

Ingredients

  • 2 lbs Halal chicken breast
  • 3 Bok Choy
  • 4 stalks celery
  • 4 cremini mushrooms
  • 8 oz snow peas
  • 3-4 tbsp peanut oil
  • Pair with Kaiser Spring Rolls (optional)
  • 3 cloves garlic, crushed
  • 1 tbsp neutral flavored oil (peanut)
  • 2 tbsp oyster sauce
  • 2 tsp cornstarch
  • 2 tbsp water
  • 1 tsp toasted sesame oil
  • 2 tbsp oyster sauce
  • 1 ½ tsp dark soy sauce
  • 2 tbsp low sodium soy sauce
  • ½ tsp sugar
  • 1 tsp white pepper
  • ¾ cup Halal chicken broth

Directions

  1. Mix together the marinade then slice the chicken into bite size pieces and mix into the marinade until coated and liquid is absorbed, set aside for 15 minutes while you prep the rest of the ingredients.
  2. Prep the veggies by slicing the root end of the bok choy from the leaf, then cut these into quarters, set the leaf and root aside separately. Slice the carrot into chunks, slice the celery and mushrooms and set these aside with the root bok choy. Slice snow peas in half and set these aside with the bok choy leaf.
  3. Mix together the sauce and set aside.
  4. In a large wok or pot, cook the chicken over medium heat in 3-4 tbsp peanut oil until golden brown and the outside is slightly crispy, then remove from heat and set aside.
  5. Add the dense vegetable to the pot and cook until they begin to soften, or about 5 minutes. Mix in the garlic until fragrant, then mix in the sauce and let simmer for 7-10 minutes.
  6. Add in the leaf bok choy and snow peas and let simmer for 5 minutes, then add in the chicken and let simmer for another 5 minutes until sauce starts to thicken. If needed, stream in a few tablespoons of a cornstarch slurry and mix until sauce is thick enough to coat the back of a spoon. Then remove from heat.
  7. Serve with rice and Kaiser spring rolls and enjoy!
