Once you start assembling everything to cook together a deep wok is ideal, but a deep enough pan will do the trick, as long as it can hold all of the ingredients without spilling while you do the mixing and stirring. A lot of the time that will be spent cooking this will be stirring and waiting for the carrots to soften and the cabbage to cook down before adding your noodles, cooked chicken, and mixing in your sauces to get everything coated and equally delicious. Ingredients

  • 1.5-2 lbs Halal chicken breast, diced
  • 3 tsp cornstarch
  • 3 tsp water
  • 2 tsp vegetable oil (or neutral flavored oil)
  • ¼ head of cabbage, julienned
  • 4 large carrots, sliced
  • 2 green onion, sliced
  • 3 cloves garlic, crushed
  • 1lb cooked lo mein noodles
  • 2 tbsp apple cider vinegar
  • Salt
  • Pepper
  • 1 ½ tsp toasted sesame oil
  • 3 tbsp dark soy sauce
  • 4 tsp soy sauce
  • 1 tsp sugar

Directions

  1. Prepare your vegetables by thin slicing the cabbage, cutting the carrots into medium sized pieces, and slicing the green onion into 1 inch pieces and set them all aside. Slice your Halal chicken breast into bite sized pieces and mix in a bowl with cornstarch, water, and oil until evenly coated and set aside.
  2. Start boiling your lo mein noodles in a pot of water. In a separate high-rimmed pan or wok, cook your chicken thoroughly in 1-2tbsp neutral flavored oil and remove from heat. Set heat to medium-high and add 2 tbsp vegetable oil. Add cabbage, carrots, and garlic. Stir until the veggies soften and the garlic is fragrant. When the noodles are done, remove them from heat and drain.
  3. Add the vinegar and cooked noodles and stir together. Stir in ¼ cup of water if needed to loosen the noodles. Add the cooked chicken, salt and pepper to taste, and mix again.
  4. Add the sesame oil, soy sauces, sugar, and green onions, and mix until everything is evenly coated. Remove from heat, serve, and enjoy.
