Red Robin Banzai Burger Copycat

Why go out for burgers when you’ve got this Red Robin Banzai Burger copycat recipe at home?! This is a super simple way of enjoying this tasty and tangy burger favorite, made simply Halal at home in just a few steps.

 

The backbone of this recipe is in the banzai glaze that makes this burger unique. It’s a simple blend of soy sauce, pineapple juice, and brown sugar for some sweetness. This is a really tasty glaze that goes great on these burgers, and I think would be a great one for grilled chicken for a tropical twist at your next cookout.

It needs to thicken over some heat to get to a glaze consistency, and there’s no better way to do that than with a little cornstarch slurry while it simmers. We didn’t want to dilute the flavor of this glaze though by using water and cornstarch, so we did a little science experiment and used some of the glaze itself mixed with cornstarch, then set the rest to simmer in a pan.

This method actually works great too! It helps to thicken the glaze a bit while still maximizing flavor. This doesn’t need to simmer too much, it still needs to be loose enough to brush over our burgers, so you’re aiming for about thick enough to coat the back of a spoon.

 

And speaking of burgers, we’re using Midamar’s Halal 100% pure beef burgers for this. They’ve got the classic burger flavor that goes with this banzai glaze perfectly. Brush on a few layers of the glaze on both sides as you flip and cook these burgers so that tangy tropical flavor gets nice and infused in there.

When the burgers are done, grill some pineapple slices over low heat baste those too. These cook and soften really quickly, so low heat will keep them from turning into mush. And using canned pineapple slices is handy, as you can use the juice from the can for the glaze earlier in the recipe.

 

If you want to put any extra glaze to good use when the grilling’s done, simmer it in a pan with a slurry just like you did earlier. This just gives an extra banzai boost to the final burgers that tastes awesome.

When everything’s ready, build your tasty burger on a brioche bun with mayo, a patty, some sauce, pineapple, tomato, and shredded lettuce then you’re all set. We served ours with some steak fries for that restaurant burger experience.

This is a great changeup to the usual burger recipe thanks to the glaze and sauce. It’s tangy in a way that makes these burgers feel like a tropical Pacific vacation! Red Robin Banzai Burger Copycat

Ingredients

  • 1 package of Halal 100% Beef Burgers

  • ¾ cup reduced sodium soy sauce

  • ¾ cup pineapple juice

  • ⅓ cup brown sugar

  • Cornstarch (about 2-3 tbsp)

  • Pineapple Slices

  • Brioche Buns

  • Cheddar Cheese Slices

  • Tomato Slices

  • Mayonnaise

  • Shredded Lettuce

  • Steak Fries, for serving

Directions

  1. Whisk together the glaze by combining the soy sauce, pineapple juice, and brown sugar until combined. Then reserve about ⅓ cp of it in a measuring cup. Add about 1-2 tbsp of cornstarch to the cup and whisk it together to make a slurry, then pour the rest of the glaze into a pan and simmer over medium heat. Simmer the glaze and whisk in the slurry in batches until the glaze thickens enough to coat the back of a spoon, then remove the pan from heat.

  2. Heat the grill to medium heat and start cooking the burgers, cooking for a few minutes on each side. Brush both sides of the burgers with the glaze as they cook, then when the patties are fully cooked and glazed, remove them from heat. Lower the heat to low and grill the pineapple slices, brushing with the glaze just like the patties, then remove them from heat.

  3. Make the remaining glaze into a sauce by pouring it into a pan over medium heat, reserving some and combining it again with 1-2 tbsp of cornstarch to make a slurry. Simmer the glaze and add the slurry in batches until it thickens into a sauce.

  4. Build the burgers on a brioche bun with mayo on the bottom, a burger patty, sauce, cheddar cheese, pineapple, a tomato slice, shredded lettuce, and more mayo on top. Serve the burgers with fries and enjoy!
