It’s a lot easier to not skip breakfast when you have a recipe as tasty as this Blarney Breakfast Bake. It’s an awesome make-ahead option that’s got everything you need to take on the day, scrambled egg, fresh veggies, and plenty of melty cheese all in a single slice.
You can start this well ahead of time, maybe over the weekend before the work week starts, by dicing up and laying out some hearty wholegrain bread overnight or in front of a fan for a few hours. A hearty bread will serve as a good base for the bake without getting too soft or soggy later when it’s all layered together.
It’s called a Blarney bake from the titular cheese we’ll be mixing in later. Blarney Cheese is a soft Irish cheese that’s similar to gouda, and in keeping with the Irish theme, this bake is jam packed with a hearty blend of veggies. Fans of onion, mushrooms, and tomato rejoice because this is a robust and savory casserole that packs a lot of flavor, and it always feels good to start the day with some healthy veggies.
We cooked the onion and mushrooms in a pan with some of Midamars Halal breakfast sausage links. We squeezed the sausage out of the casing to make a nice sausage crumble mixed with the veggies, so you get that great sausage flavor mixed evenly throughout, getting a little bit in every bite. When everything is cooked, let it cool for a bit before you dump out most of the drippings from the sausage, fat is flavor in cooking so leave yourself some for that classic sausage taste, but we don’t want to overdo it and leave it too greasy, both for flavor and for our health.
The real base of this recipe comes from the egg mix that will tie it all together though. It’s just a dozen eggs whisked in a bowl with a few simple seasoning until nice and smooth. This couldn’t be simpler then you’re ready to build the bake!
It’s as simple as layering the veggies, sausage, and bread in a casserole dish with plenty of shredded Blarney and cheddar cheeses, like an Irish lasagna. Then pour in the eggs so they’re evenly incorporated into the dish, then give it a bake till it’s cooked through and you’re all set! Grab yourself a slice in dig in.
I admit, I’m always a fan of a savory breakfast, so this recipe checked all the boxes for me. I love the savory veggies and sausage, and while I usually prefer over-easy eggs, what’s not to love about a good scramble mixed with plenty of melty cheese?
