Stuffed Chicken Pinwheels

For a lot of people, a classic and simple dinner recipe probably consists of something easy, like chicken with a few veggies for the perfect meal that’s good and good for you. And now, we're pleased to announce that you can have your juicy chicken and fresh veggies all rolled up, literally, into one deliciously simple recipe with these Stuffed Chicken Pinwheels!

These are a great recipe to make for a nice and easy meal that you get to have a little fun with, and they’re great year-round. They’re perfect to bake during the colder months, like we did, or you can get out and grill them when the weather warms up. And you only need a few ingredients that provide a lot of great flavors. For our filling we used slices of provolone, some diced asparagus, and a few sun-dried tomatoes, rolled up in Halal chicken breast from Midamar. The filling for these is an opportunity to experiment with how you want yours to taste, whatever your favorite side dish is for chicken, roll it into these rollups and give it a try! We also made a tasty garlic butter with a diced shallot to baste these in and give them that beautiful golden-brown color we all love to see when they're done baking.

There isn’t much to worry about in the way of preparation, just dice some asparagus and a shallot, then pound the chicken breast flat and slice them into a few thin fillets, and you’re ready to start putting these together. Just lay out a few small scoops of asparagus and tomato on a slice of provolone on each fillet, then roll it all together, keeping everything inside as best as you can. Lay these out on a baking sheet and baste them in the garlic butter then they bake until they’re done, simple!

We wanted to incorporate our shallot into the recipe as more than just a component of the garlic butter, so we tried to lay out some sautéed onion over the top of each pinwheel. Unfortunately, this step didn’t quite work out as the already cooked shallot proceeded to burn over top as they baked, but oh well, this wasn’t anything that simply scooping the shallot off couldn’t fix. Otherwise, these just need to be baked until the chicken is cooked thoroughly and you’re all set. This doesn’t take long for this as the fillets are pounded so flat that they cook through to the middle in no time.

When these are done, they make for a very tasty and simple meal, with the best flavors of juicy chicken and fresh veggies all rolled into one. These are great for a light meal that tastes great, and you can feel even better about eating. They're ready in no time when you’re in need of a quick and delicious recipe and, as the weather warms up, I’m sure these would be even better on a grill. Ingredients

  • 1.5 lbs Halal chicken breast
  • 1 ½ cup asparagus, diced
  • Sun-dried tomato
  • Provolone slices
  • Serve with Wild Garden rice pilaf
  • ½ cup butter
  • 1 shallot, diced
  • 4 cloves garlic, crushed

Directions

  1. For the garlic butter, melt the butter in a pan over medium heat and add the garlic and shallot. Simmer until the shallot is golden brown and the garlic is fragrant, then remove from heat and set aside.
  2. Pound the chicken breast flat and slice into 4 thin fillets. Lay a slice of provolone on each and a small scoop of the asparagus and a few slices of sun-dried tomato. Roll up the fillets, keeping the filling inside, and pin sealed with toothpicks.
  3. Lay the pinwheels out on a lined baking sheet and baste with the garlic butter, bake at 400 degrees for 20-30 minutes, until the chicken is cooked through and the inside of each pinwheel reaches 165 degrees. Serve with Wild Garden rice pilaf and enjoy!
