I hit you with a lot right off the bat so let’s take a closer look at the individual parts of this recipe, starting with the rice. Each individual part is done in no time so if you start with this rice, it’ll be done by the time you finish everything else, so it all comes together perfectly in the end.

We seasoned ours with furikake and a little sesame oil and this is a great choice for adding something savory to the tanginess of the bang bang sauce. Rice is always a great choice for a simple carb to serve as a base for your meal too, we served ours as a to-go bento box and it works equally well as a sit-down meal at home.

It’s a simple blend of some sweet and tangy condiment favorites like mayonnaise, some honey, a healthy amount of sweet chili sauce, and sriracha. The chili sauce and sriracha are great for a healthy kick of flavor but if you can use gochujang instead if you’re a fan of spice and are feeling bold.

After tossing the chicken in some sauce, we served ours in a bento with the rice and the veggie salad for a great on-the-go option or packed lunch option. But like I said earlier, this works equally well for a stay-in meal at home or quick lunch, the options are limitless! Ingredients

  • 1 package of Halal chicken nuggets
  • Sesame seeds, for serving
  • Green onion, for serving
  • 1 cup short grain white rice
  • 2 tbsp furikake
  • ½ tbsp toasted sesame oil
  • 4 small cucumbers, julienned
  • 2 cups carrots, julienned
  • 1 tsp toasted sesame oil
  • ½ tsp pepper
  • 1 tsp lemon juice
  • 1 ¼ cup mayonnaise
  • 2 tbsp honey
  • 2/3 cup sweet chili sauce
  • 2 tsp sriracha

Directions

  1. Start cooking the rice in a rice cooker or pot. While that cooks, slice your cucumber and carrots into matchstick size pieces and mix with the sesame oil, pepper, and lemon juice until evenly coated then set aside.
  2. When the rice is done cooking, add it to a mixing bowl. When it’s cooled enough to touch, add the furikake and toasted sesame oil and mix until evenly coated and set aside.
  3. Cook 1 package of Halal chicken nuggets according to package instructions. While that cooks, mix together the bang bang sauce until smooth, then toss the cooked nuggets in some sauce until evenly coated. Keep some sauce aside for topping the final dish.
  4. Serve the nuggets with the rice and veggie salad, top with more sauce, green onion, and sesame seeds if desired, and enjoy!
