What a perfect recipe if you’re looking for simplicity. It’s a simple blend of BBQ sauce, ketchup and a few choice seasonings like cumin and cayenne, tossed into a slow cooker with some Halal chicken thighs from Midamar. There’s more seasoning than that, of course, but this is predominantly a BBQ sauce with the perfect mix of sweetness combined with its tanginess. We also used a healthy amount of cayenne pepper in ours, but it actually ended up being perfect for how much chicken this makes and how much sauce it simmers in, just enough to add a little kick without being overpowering.
Set it up to cook on high for 3 hours and the bulk of this recipe is done. But tangy BBQ is made even better with something crisp and refreshing to complement it, so we took this opportunity to make a tasty coleslaw too. The classic mix of cabbage, carrots, vinegar, and sesame oil makes for a very tasty slaw indeed, but the addition of some maple syrup is just enough to keep this from being too tangy as well. This is meant to contrast with the BBQ after all, and the slaw and chicken combo elevates both parts, making them even tastier.
When the times up the chicken is ready to be shredded, and what a slow cooked delight this chicken is. Personally, I love slow cooker recipes for meat because they are the simplest way to have the most tender meat possible, it shreds with just a few forks. Mix it back into the sauce and you’re all set to serve with the slaw, couldn’t be simpler.
