Last week, we made a deliciously authentic Shio Ramen recipe that used our Halal ground chicken to make it’s amazingly savory broth; but we didn’t want to waste perfectly good ground chicken that was now fully cooked and infused with that brothy goodness, so we put it to great use this week in a very tasty Kimchi Soup recipe! Fans of the Korean favorite will find a lot to love in this one, it’s jam packed full of spicy kimchi and flavorful chicken, and it’s done in no time for the perfect quick and easy meal.
There isn’t much to this recipe, and sometimes that’s just the recipe you need. Once everything starts cookin’ in the pot, it doesn’t stop till you have a tasty bowl of soup in front of you. We started by heating up our ground chicken, ours was fully cooked from simmering in the ramen broth, but if you’re using raw chicken then just mix it up and let it cook thoroughly.
Then it’s time for the most important part of the whole recipe, the kimchi. There are all different kinds, and they’re all full of great flavor but we went with spicy kimchi so by the time everything was added in and mixed together, it would be diluted enough to still have a tangy kick without being too overpowering. This is a great place to make the recipe your own though, if you don’t like spice then by all means, go for a milder kimchi. Same with the amount you use, we used the whole jar we had which ended up being about 2 pounds worth, but if you want the kimchi as more of an accent ingredient to the chicken and noodles, then feel free to use more or less kimchi.
Can’t have a soup without stock, so add in plenty of stock and get it boiling, then toss in some glass noodles. These cook in no time, so you’re basically done with this recipe already. The final piece is an interesting one, drizzle some whisked eggs into the boiling pot and just let it sit for a few minutes while the egg cooks. Personally, I had never had egg like this in a soup and it works great, the egg cooks to be nice and fluffy and you get a little bit of it in every bite.
When the noodles are tender and egg is cooked, you’re ready to eat! Top off your soup with some sesame seeds and diced green onion and dive in. I was really surprised at how great this turned out, and I’m a kimchi fan so I had high hopes. It had that great kimchi flavor with savory chicken and tender noodles that really came together for a very tasty bowl of soup.
