Nothing says Fall cooking like a hot and tasty bowl of
homemade soup to warm up as the weather gets chilly, and when I think of the
perfect Fall recipe, I think of a hot bowl of soup. But not just any soup will
do, I need the quintessential Fall favorite with this Butternut Squash Soup.
It’s the perfect recipe for rich and hearty flavors that make soup season so
special. This soup is meant to be simple, so all you need is a big pot to start
cooking.
We had to add our own Midamar spin to this classic, so we included some of our
always-appreciated ground beef into the mix, along with some other veggies that
help make this a deliciously fresh pot of soup. I know I say it for all our
recipes, but this is one that really does it all! Butternut squash has a fair
amount of natural sweetness, so the inclusion of savory ground beef with
sauteed onion and red pepper adds a tasty contrast for flavor and texture in
what is otherwise a nice, smooth bisque.
We shot for maximum convenience for our soup, so while you can use fresh
squash, we used Sno Pac frozen squash. This meant all we needed to do was get
it nice and toasty in the pot until it was tender enough to blend. Same with
our corn, so this is a great recipe to throw together at the end of the day
when you want a quick and tasty dinner.
What doesn’t change about our recipe, though, is how simple this recipe is to
make. Like any good soup, this recipe will all be cooked and assembled in a
large pot. That saves you time on dishes at the end and lets all the great flavors
of each ingredient come together and make each other that much tastier. We
started with the beef, onion, and pepper, then moved them to a mixing bowl when
they were done, and began simmering the remaining ingredients in the pot.
The rest will simmer in the pot until nice and tender, then get blended smooth
into that deliciously creamy consistency we love about a good squash or tomato
soup. Top it all off with the beef and veggies from earlier with a few final
seasonings, salt, and pepper to your taste, and you’re all set.

time of year, and I love them even more when they’re this simple and this
tasty. This is the perfect recipe if you’re looking for something quick and
convenient, but doesn’t go light on great flavor for the perfect blend of just
a little sweet with plenty of savory from the beef, veggies, and seasonings. It
makes plenty to feed any hungry friends and family you may have this soup
