Cajun Dirty Cabbage

Spice up your usual one-pot recipes with a Cajun favorite! This Cajun Dirty cabbage recipe has all the creole flavors you expect from tasty Southern cooking, but made with Halal ground lamb and smoked beef franks as a replacement for the andouille sausage.

 

This recipe is super simple, and a great option to whip up for an easy dinner; it’s a few fresh veggies, Halal meats, and plenty of seasonings all mixed together in a pot. A lot of dirty cabbage recipes use sausage and ground beef but we wanted to mix it up a bit. We thought a recipe this flavorful was the perfect opportunity for some equally tasty Halal ground lamb, and we were right! It complements the smoky, savory, and spicy flavors that come together in the pot perfectly.

And speaking of smoky, a lot of Cajun cooking uses heavily smoked Andouille pork sausage, and a great replacement for that keystone flavor can be found in Midamar’s Halal smoked beef franks. This combined with the lamb provides plenty of flavor, and if you’re looking for the more classic flavor, Halal ground beef is always a great go-to option as well. We gave out beef franks a quick cook in the pot just to get a little char on the outside; these are already fully cooked, so we just wanted to maximize the smoked flavor they’ll add when we toss them back in the pot.

 

Otherwise, when you start cooking, you don’t have to worry about too much until it’s all done and ready to dive into. It’s super simple, just brown the ground lamb, add in some red pepper and diced onion, then add in a bunch of chopped cabbage in batches. The cabbage cooks down a ton while it cooks, so don’t overcrowd the pot all in one go, let it cook in a cup or two of beef broth and mix occasionally.

 

When it’s sufficiently softened, add in your seasoning and the beef franks and mix it all together. This is a great recipe to taste occasionally to test the seasoning and adjust to your taste. We used a decent amount of creole seasoning, but fans of spice can always use more, or add in red pepper flakes.

 

That’s all there is to it for this one! This is a simple way to prepare a delicious meal with only a few ingredients, and this pot makes plenty of it. The meats and seasonings are smoky, savory, and just the right amount of spicy, the veggies are incredibly fresh, and even though the cabbage is softened, it still has some satisfying crunch along with the peppers.

This Cajun Dirty Cabbage recipe is made with Halal ground lamb and smoked beef franks as a replacement for the andouille sausage, then perfectly seasoned for the classic creole flavor! It's a spicy, smokey, and oh so flavorful recipe that's perfect for a simple and delicious meal.

Cajun Dirty Cabbage

Ingredients

  • 1 lb Halal ground lamb

  • 1 package Halal Smoked beef Franks

  • 1 red bell pepper

  • 1 yellow onion

  • 2 ½ lbs cabbage

  • 1 packet of beefy onion soup mix

  • 2 tbsp tomato paste

  • 3 tbsp flour

  • 2 cups beef stock

  • 1 tbsp garlic powder

  • 1 tbsp onion powder

  • ½ tbsp smoked paprika

  • 3 tbsp Tony Chachere’s Creole seasoning

  • 2 tbsp Morton’s Nature Seasoning

  • Sno Pac Mixed Vegetables, for serving

  • Cornbread, for serving

Directions

  1. Start by slicing the red pepper into bite size peices, then dice the yellow onion and set them both aside. Slice the cabbage into long thin strips, then set it aside separate from the pepper and onion.

  2. Slice the beef franks into bite-size pieces, then cook them in a Dutch oven over medium heat, just enough to heat them through and cook the outside, then remove them from the pot. Add the ground beef to the pot and cook until no pink remains.

  3. Mix in the onion soup mix, then add in the onion and pepper and mix until they’ve softened. Mix in the tomato paste until incorporated, then mix in the flour. Add 1 cup of the beef stock and the cabbage in batches, mixing occasionally until it cooks down before adding more. Add in the other cup of beef stock as needed to prevent burning.

  4. When the cabbage is soft and has cooked down, and the garlic powder, onion powder, smoked paprika, and 1 tbsp of the creole seasoning then give it a taste to adjust. We added another 2 tbsp of the creole seasoning and the nature seasoning. For a spicier mix, add in red pepper flakes as well.

  5. When everything is cooked, add the beef franks back into the pot, then serve it with mixed veggies and cornbread.
