Today we’re taking inspiration from the Bahn Mi that’s been popular recently. Typically, this sandwich isn’t halal, but recently I’ve been craving our Hot Links so I thought I’d take a shot at making a breakfast bahn mi with a sunny side up egg to make something that’s a little more feasible for a unique breakfast option. Personally, I prefer sunny side up eggs on mine, but you cook them anyway you like. Or you could even leave them off, it is whatever you like! I’m really enjoyed the radishes on this sandwich and I’ve found a new confidence in using them in more recipes… and by that I mean I’m going to keep making variations on bahn mi’s. So keep your eyes peeled because there is a good chance you’ll see another bahn mi recipe in the future!

Ingredients:
1 Cup of Rice Vinegar
½ Cup of Water
¼ Cup Sugar
½ Tsp. Salt
¼ Tsp. Pepper
Cup Sliced Radishes
Cup Shredded Carrots
Cup Sliced Red Bell Pepper
1 Package of Midamar Beef Hot Links
¼ Cup Zesty Bell Pepper Relish
½ Cup Sliced Cucumbers
4 large eggs
2 Pieces of Naan Bread Cut In Half
Cilantro (optional)
Instructions:
1) Combine first 5 ingredients, whisk until sugar is dissolved. Add radishes, red peppers, and carrots let sit until serving
2) Slice Hot Links and cook over medium heat until cooked through, do not drain. Remove and keep warm.
3) Reduce heat, add eggs and cook sunny side up.
4) Spread relish on naan bread, drain veggies from vinegar and place it on naan, add sliced Midamar Hot Links, Lay egg on top, finally top with cucumber.
