Cooking with Cass: Tater Tot Casserole

It’s September! And I have arbitrarily decided that it’s the perfect time for some comfort food. So, we’re making a tater tot casserole! It’s beefy, it’s cheesy, it’s… potato-y, what else do you need in life? Not to mention it’s pretty easy to make and not too time consuming. I personally think that this served with some steamed broccoli and carrots would be nice, or maybe some steamed corn. I know I mentioned this in a previous post but I gotta say it again, always grate your own cheese! You’ll get a better cheese taste, a better melt, and it’ll take less time to melt. I really liked this dish, the only thing that would make it better is throwing some our breakfast beef into it to get a nice smokey flavor cooked throughout the whole thing. If you do decide to ad the breakfast beef I would cook probably 8 strips, I’d cut those into bits and throw most of it into the beef mixture as it’s cooked. I’d put the remaining breakfast beef  bits on the top. But you can add the breakfast beef as you see fit!

Ingredients:

1 lb Ground Beef

½ Large White Onion diced

2 Cups of Tomato Sauce

½ Tbsp Burger Seasoning

½ Tbsp Ground Mustard

½ Tbsp Worcestershire Sauce

4 Cups freshly grated Cheddar Cheese, divided

1 Bag of Frozen Tater Tots  

Instructions:

1) Preheat oven to 400° F; cook beef and onion until onion is tender. Drain, stir in tomato sauce, cheese, ground mustard, and Worcestershire sauce. Cook until cheese is melted and remove from heat.

2) Pour beef mixture into a greased casserole dish. Cover with remaining cheese, and layer tater tots in 2-3 layers.

3) Bake for 35-40 minutes or until tater tots are golden brown

4) Remove from heat and enjoy!
