Easy Polynesian Pulled Chicken
When I say this recipe is easy, I mean it! Simply combine all the ingredients in your slow cooker, whisk to combine it, add your chicken and cook it low and slow. This allows the chicken to slowly absorb all the flavors the vegetables, fruits, and sauce. Once the chicken cooks for 3-5 hours, it's as easy as shredding the chicken, mixing up the meat with the sauce and serving on a bun with your favorite chips and a drink!
If you'd like to add some heat to this recipe, try tossing in 1-2 tsp of red pepper flakes or add 2 thai chilies.

1) Place all ingredients except the chicken, bread, cilantro, water, and corn starch into slow cooker and whisk to combine. Place chicken on top, cover with sauce, place lid on slow cooker and set to low for 3 hours. After 3 hours, shred chicken with 2 forks then combine water and corn starch and whisk until corn starch is dissolved. Add corn starch to sauce, whisk to combine, set slow cooker to high and cook for 15 more minutes. Turn slow cooker to warm, serve chicken on sandwich bread or buns with chips and enjoy!
