It’s hard to beat a tasty recipe of fresh veggies and tender grilled chicken. This Tomato Basil Grilled Chicken has all the fresh flavors you’re craving, and they taste even better in a no fuss recipe like this that combines the best parts of simple and tasty grilling with a one-pan dinner recipe!


Simple Preparation Makes It Taste Even Better

As the name suggests, this recipe is heavy on fresh tomatoes, with the addition of a few other choice veggies like red onion and a few serrano peppers for a lil’ bit of added kick. These all get baked together in an oven-safe baking sheet, so just toss them in there when they’re prepped and hit them with a few key seasonings.

We stuck with the greatest hits, and you can’t go wrong with olive oil, salt and pepper, and garlic and onion powders. They’re the perfect go to combination for adding little bit of savory pizzazz to veggies while still maintaining their natural and fresh flavors. These will be baked for a little bit, just enough to start to get a little softened and for all the flavors to come together, and while they do, you can prepare your chicken and get it grilling.


Grilled Chicken: A Succulent Summer Staple

Getting chicken prepared and seasoned is also something you can do with the veggies before they go in the oven. We used the same simple blend of seasonings anyway, so you may as well use them while you’ve got them out. We pounded our chicken just a little flatter to save time on the grill while the veggies are in the oven, but they don’t need to be too flat here depending on the thickness of the chicken you’re using.

This chicken will also be baked a little bit at the very end with the veggies, so a quick trip to the grill to cook is all they’ll need to stay nice and juicy and get good outside sear that makes a recipe taste even better in the summer. When the chicken is cooked through, remove it from the grill and put it in the pan with the veggies to bake just a little bit longer. This only needs to be long enough for the flavors to all come together, but not so long for the chicken to overcook or the veggies to get too soft.
