Juicy Chicken Tacos and Tangy Mango Salsa

The Perfect Sweet and Tangy Chicken Tacos and Mango Salsa

What’s the time? It’s taco time! We have just the thing with this week’s chicken tacos that are so tender and juicy, and they come with a mango salsa recipe that is so tangy and refreshingly flavorful that they’ll turn any night into a Taco Tuesday flavor extravaganza!


Juicy, flavorful, and Halal

The secret to any good chicken taco is of course the chicken, and we of course used the best. We went with Halal chicken thighs over breast for these tacos. Chicken breast would work great pick up the flavor of the seasoning blend for juicy and flavorful tacos, but thigh brings its own additional flavor that makes these tacos even more enjoyable.

With the addition of a few seasonings, the time it takes to cook the chicken is all the cooking you need to worry about for this recipe. That simplicity is always nice to have for nights where you don’t want to spend too much time cooking and spend more time eating and enjoying.

Mango Salsa: A Tangy Taco Treat

The other key ingredient to these dangerously delicious tacos is their sweet and tangy mango salsa. We used the other classic salsa ingredients like red onion, red pepper, and a few diced jalapeños for a fresh and tangy addition to the sweetness of the mango. We deseeded the jalapeño so it wasn’t too spicy while still adding flavor, but if you crave a little kick, leave the seeds and mix these in the salsa with some lime juice for a sweet and spicy salsa that will go great on these tacos.


Time For a Fiesta

There isn’t much to these tacos, but they still pack amazing flavor. Just lay out a tortilla and add a scoop of chicken, salsa, and top with a fresh Mexican crema sauce and cotija cheese and you’re all set! Do yourself a flavor favor and add a squirt of lime juice over top for some fresh citrus to go with the juicy seasoned chicken and refreshing mango salsa.


Taco 'Bout A Tasty Recipe

There isn’t much stopping you from enjoying the perfect summer recipe with these tacos. The chicken was a great choice to pan-fry, but tis the season for grilling so I’m sure they’d be even better with juicy grilled chicken. Ingredients

  • 2 lbs Halal chicken thighs
  • 1 tbsp avocado oil
  • 1 tbsp soy sauce
  • Salt and Pepper
  • 2 tbsp taco seasoning
  • Cotija cheese
  • Lime wedges, for serving
  • Cilantro, for serving
  • Tortillas
  • ½ red onion, diced
  • 1 large clove garlic, crushed
  • 2 jalapenos, deseeded and diced
  • 2 mangos, diced
  • Juice of 1 lime
  • Salt and Pepper, to taste
  • 1 ½ tbsp cilantro
  • Juice of 1 lime
  • 1 cup crema
  • Salt, to taste

Directions

  1. For the crema sauce, blend the ingredients in a blender or food processor until smooth, then refrigerate and set aside.
  2. Prepare the ingredients for the mango salsa. For the mango, slice the fruit a little off center to avoid the pit, then make small cuts on the inside the fruit down to the skin, then flip inside out, and slice of the fruit. Mix everything together in a mixing bowl until evenly coated and set aside.
  3. Slice the chicken thigh into thin strips, then mix in a bowl with the avocado oil, soy sauce, salt and pepper, and taco seasoning. Cook over medium heat until each piece is cooked thoroughly then remove from heat.
  4. Lay out a tortilla, add a scoop of chicken to the center with a scoop of salsa, top with the crema, cotija, and cilantro, and lime juice if desired
