Savory and Fresh Authentic Kofta and Tabouli

Middle Eastern cooking is always a great opportunity to dig in to rich flavors and blend of ingredients that make each better when enjoyed together. It should come as no surprise then that these Kofta Kababs and homemade Tabouli are the perfect mix of perfectly seasoned and savory Halal meat with fresh and flavorful veggies, served on a wrap with some hummus for the perfect all-in-one flavor extravaganza!

This is a recipe that keeps on giving, it’s almost hard to know where to start so let’s jump into the tabouli. If you aren’t familiar, it’s a Mediterranean salad of minced parsley along with some other fresh veggies like tomato and onion. It’s served cold and makes for the perfect complement to the hot and savory kababs.

We plucked a lot of parsley for this recipe, both for the tabouli itself and for mixing into the kababs later, but I digress, a cold salad is also always the perfect chance to maximize freshness, so we included some cucumber with the classic lemon juice. Mincing up all the parsley can be done so much quicker with a food processor, and ironically a smaller one works best to make sure everything gets chopped up evenly. We started with a large processor and had switch later to a smaller one, so save yourself the headache and chop this all up in batches in a small processor if you’ve got it!

Speaking of parsley, a healthy amount of it will be mixed into these tasty Halal kababs. We went with a mix of Halal lamb and ground beef from Midamar to give a nice mix of flavor without either being too overpowering. They’re seasoned of course with the always classic salt and pepper wombo-combo, but a little dried mint, when paired with the parsley, does an amazing job at adding its own freshness to what could otherwise be very savory kababs.

We had 3 pounds of meat, so this makes plenty of skewers! Hope you have a lot of hungry friends and family that’re ready to eat when these are done. A quick trip to a hot grill is all it takes and you’ll be feasting in no time. After they’re done on the grill, let them rest for a bit to stay nice and juicy. Rich and complex flavors are great, but nobody wants a dry kabab!

Serve these bad boys up on a pita with the tabouli, some hummus, and extra fresh veggies and you have yourself an amazingly tasty, and tantalizingly authentic Mediterranean classic meal!
