Sweet and Savory Orange Beef

You’ve heard of orange chicken, it’s a takeout favorite with its blend of savory and citrus flavor, and we just so happen to have a recipe for it here. But for fans of beef, or just a more savory flavor profile in general, then this crispy Orange Beef is perfect for you. Like a classic orange chicken recipe, the secret to this comes from the sauce everything will be mixed into. Otherwise, we used the classic ingredients like broccoli, a few dried red chiles for some added heat, and obviously Halal chuck roast instead of the usual chicken you might be used to. We wanted our beef bits to have a nice crispy outside, so we used our classic method of coating the beef in cornstarch and frying them in batches until each piece was nice and browned. This is a time-consuming process, so if you’re in the mood for a quicker recipe you can cook all the beef together after it’s marinated and cut the time spent in half.

After the beef is cooked, everything else will finish cooking in the same pan, and aside from the handful of ingredients I mentioned earlier and the aromatics, that just leaves the sauce, the secret to all the flavor. We weren’t interested in a sauce that was merely pretending to be orange flavored, so we doubled down with as much orange as we could, while still maintaining the other flavors. This sauce is packed with orange juice and orange marmalade, and we included an orange peel in the aromatics to really make sure that this wasn’t lacking orange goodness. Simmering this in the pot has the benefit of reducing the sauce mix down to a smooth consistency perfect for mixing the beef and broccoli into, and it also makes your house smell amazing so you really can’t go wrong with this recipe. After it’s thickened a little, mix back in the beef and broccoli and mix until everything is combined, then you’re all set to enjoy this over some rice!

Ingredients

  • 2 lbs Halal chuck roast
  • ⅓ cup cornstarch
  • 12 oz broccoli
  • ½ cup peanut oil
  • 2-inch piece of ginger, peeled and sliced
  • Peel of 1 orange
  • 4 red chiles
  • 3 star anise
  • 3 cloves garlic, crushed
  • 3 green onions, sliced into 3 inch pieces
  • 2 tbsp water
  • 2 tsp Chinese 5 spice
  • 2 tsp baking soda
  • 4 tsp cornstarch
  • 4 tsp orange juice
  • 2 tsp oyster sauce
  • ¼ tsp white pepper
  • 2 tbsp orange marmalade
  • 2 tbsp sugar
  • 6 tbsp soy sauce
  • ½ tsp toasted sesame oil
  • 1 cup orange juice
  • ¾ cup water

Directions

  1. Slice the chuck roast into bite-size pieces and coat in the marinade, set aside for at least 1 hour. Mix the ingredients for the sauce in a mixing bowl and set aside.
  2. When the beef is marinated, sprinkle it with the cornstarch and mix until evenly coated and set aside. Blach the broccoli in boiling water for 30 seconds to 1 minute, then remove and set aside.
  3. Add the peanut oil to a large pot or wok over medium-high heat and cook the beef in batches until both sides are brown and the outside is crispy, then remove the beef from the pot.
  4. Reduce heat to medium and add the ginger, orange peel, chiles, and star anise to the pot and mix until fragrant. Then add the garlic, mix until fragrant, then add the green onion. Our in the sauce and bring to a simmer until it begins to thicken, mix in a few tablespoons of cornstarch slurry to help thicken if needed..
  5. When the sauce is thick enough to coat the back of a spoon, mix in the beef and broccoli until evenly coated, serve over white rice.
