It comes with a great homemade sweet-and-tangy marinade and a few grilled fruits and veggies to go with the succulent grilled Halal chicken thighs that give you the taste of the tropics but from the comfort of your kitchen. We’ll start off with the marinade, on top of being the first step in preparing this recipe it’s also what will be infusing everything with that tropical flavor that you came for. It’s a sizeable mix of sauces like soy sauce, ketchup, and sweet chili sauce with a few other seasonings like ground ginger and brown sugar. Already that has the makings of a pretty complex sweet and tangy sauce, but the real secret comes with the pineapple juice to really cement that sweet island flavor, but you’ll want to make sure you’re using canned pineapple juice, fresh pineapple juice will come with enzymes that will break down your chicken as it marinates leaving you with an over-soft mess instead of juicy chicken thighs.
