Summer has started and that means you’re gonna need some tasty recipes to enjoy with friends and family. This week we’ve got the perfect thing with these halal BBQ beef sliders that are tender, juicy, and perfect for serving! You can also beat the heat with this homemade potato salad for the perfect summer flavor wombo-combo that’s begging to be brought to your next cookout!

 

BBQ Beef Sliders Babyyyyy

We’ll save the best for first and get into these sliders. We knew we were going to have a lot of tasty little sandwiches to make with this recipe, so we used 4 pounds of Halal chuck roast for this, and that makes plenty to go around. It’s also a great cut of meat for slow cooking, with that looooong cook time it’ll still come out perfectly tender. If you use a smaller amount of beef, then this is also a great recipe to toss into an instant pot and save yourself a lot of time.

We tossed it into a slow cooker with a chopped yellow onion and few simple seasonings like brown sugar, chili powder, and of course some honey BBQ sauce just to impart that beef with a little bit of flavor while it cooks and we’ll add more sauce later when it’s shredded.

 

Simple Sliders Perfect for Serving

When the beef is done, it should be oh so perfectly tender that it can be shredded with a couple forks and mixed in with more BBQ sauce. As tempting as it is to dive into this now, instead spread it over a 24 pack of rolls that you’ve sliced in half, top with some crispy onions, and cheddar cheese slices, and bake it for a few more minutes until it’s golden brown and melty.

These are so tasty and so easy to make, and they make for the perfect thing to serve up to friends and family when you’re all getting together this summer!

 

The Perfect Potato Salad

If you’re looking for a side to serve with these sliders, then this homemade potato salad is the perfect and refreshingly cool compliment to your tangy BBQ. This is great to make while the beef cooks, so you’ll have plenty of time to get it made and keep refrigerated before you serve it.

It’s mostly just a matter of chopping all the veggies that will go into this: potatoes, celery, some green onion, and pickles. A pot of boiling water is all you need to get the potatoes fork tender and boil some eggs for about 10 minutes before mixing everything in a bowl with some mayonnaise and mustard.

Taste this throughout so you can get this to your personal preference. We ended up adding more mustard, salt, pepper, and pickles to ours as we mixed and tested, so don’t be afraid to get in there and try it out to get the best possible potato salad.

Ingredients

  • 4 lbs Halal chuck roast
  • 24 pack of rolls
  • Honey BBQ Sauce, to taste
  • 1 yellow onion, chopped
  • 1 tbsp Worcestershire sauce
  • 1 tbsp apple cider vinegar
  • 1 cup water
  • Crispy fried onion
  • Sliced Cheddar cheese
  • 1 ½ tbsp brown sugar
  • 1 tbsp chili
  • 1 tsp garlic powder
  • ½ tsp ground mustard
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp pepper
  • 5 lbs russet potatoes, peeled
  • 5 stalks celery, diced
  • 4 green onions, diced
  • 1 cup pickles, diced
  • 4 eggs, hard boiled
  • 1 ½ cup mayonnaise
  • ¼ cup mustard
  • Salt and Pepper, to taste

Directions

  1. Mix together the seasoning blend in a mixing bowl and set aside, reserving 2 tbsp. Chop the onion into large chunks, then remove the fat from the chuck roast and slice into large chunks, season the beef with the seasoning blend.
  2. Add the beef to a slow cooker with the onion, Worcestershire sauce, ½ cup BBQ sauce, apple cider vinegar, and water. Cook on high for 7-8 hours, until the beef is cooked and tender.
  3. When the beef is cooked, shred the beef with two forks and season with the reserved seasoning and about another ½ cup BBQ sauce, or more to your taste.
  4. Slice the sheet of rolls in half and spread out the beef over the bread, top with the crispy onion and shredded cheese. Baste with melted butter and dried parsley.
  5. Bake at 350 degrees until golden brown and cheese is melted.
  6. While the beef is slow cooking, Peel and dice the potatoes into small pieces, dice the celery, green onion, and pickles.
  7. Boil the potatoes in a large pot until tender enough to be pierced with a fork. Boil the eggs for about 10 minutes then remove from the pot with a slotted spoon and carefully peel off the shell. Then dice the eggs into small pieces.
  8. In a large mixing bowl, combine the potatoes, egg, pickles, celery, and green onion with the mayonnaise, mustard, and salt and pepper. Mix until evenly incorporated, tasting throughout and adding more of anything you need to your taste.
  9. When the salad is to your taste, refrigerate until use, then serve with the sliders, and enjoy.
