Mother’s Day is a great chance to take the time to appreciate the mothers in our lives, whoever they may be, and there’s no better way to celebrate than with the most important meal of the day. A good breakfast is the best way to start the day off right, but it feels good every now and then to get a little bit of a late start and enjoy the morning, and that’s where a great brunch recipe comes in. It’s the perfect opportunity to enjoy your favorite breakfast foods at any time of the morning, and this week’s recipe is a breakfast flavor combination, with savory breakfast sandwiches and a sweet lemon blueberry cake that’s perfect for showing mom just how much you appreciate her.
We’ll start this recipe with the homemade Bundt cake. We love a good breakfast sandwich, and more on those later, but this cake was the real star of this recipe. Baking intimidates a lot of people with its precise directions and measurements to ensure the best final product, but this is a pretty straightforward recipe, and the cake is well worth it. Measure out a few ingredients and get mixing, just take your time to add everything at the right time to ensure that you get the batter right, it’s as simple as that. After the ingredients for the batter were mixed, the batter itself was quite thick and the blueberries still needed to be added in, luckily we had Sno Pac frozen blueberries. Mixing these in was great because they were able to mix throughout the batter evenly and still hold up, while thawed berries or berries that are too soft might crush and discolor the batter. After its hour is up in the oven, test the inside is done with a toothpick and if it needs more time, give it another 10 or so minutes to let it finish cooking entirely without overcooking the outside. After it’s done, let it cool and settle before removing it from the pan. Great flavor combinations are the name of the game this week and this cake is definitely no exception because it tasted terrific, the lemon had just enough tart to go with the sweetness of the rest of the cake and that made this a real treat for us to all enjoy.

These are very straightforward, fluffy scrambled egg, cheese, and Halal beef strips on croissants, a breakfast classic and a great way to start your morning. The beef strips and the egg can be made in a pan one after the other, and after everything is assembled on the sandwiches, a quick trip to the oven for a few minutes melts the cheese and gives the croissants a crispy outside without being so crisp that they’re too flaky. Personally, I enjoyed everything about these sandwiches, they were easy to make and taste terrific on their own, but are made even better with a slice of the Bundt cake.
