The Tastiest Cheesy Meatloaf Family Recipe

We pride ourselves here at Midamar for providing a wide array of recipes for everyone to enjoy. As good as Malaysian Laksa and Tuscan Chicken are, sometimes it’s good to get back to the basics and enjoy a quintessential dinner recipe, so this week we’re keeping it simple (yet tasty) with a family recipe classic: Meatloaf!


This isn’t just any meatloaf though; we had to add a tasty family-tradition flavor twist passed down for generations. This meatloaf is jam-packed with cheese and spinach, it’s like getting a complete meal all in one, and that’s before you serve it with homemade mashed potatoes and quick and convenient mixed veggies.


The meatloaf starts as you might expect; season some ground beef, add some breadcrumbs and some eggs and mix it all together. Most of the flavor comes from the hamburger seasoning and you can use whatever happens to be you favorite. We use McCormick which has salt included, but if yours doesn’t, then be sure to add the salt separately to maximize your flavor.


Instead of laying this out in a pan to make a, well, a loaf, instead spread it out over the inside of a casserole dish. This includes along the bottom and up the sides to make a sort of meatloaf bowl. This large cavity will then get filled with plenty of shredded cheddar and spinach in alternating layers. That’s the secret, folks, and what really sets this recipe apart and turns it into a gooey, cheesy, and delicious twist on the classic recipe!

Cover it in foil and put it in the oven for about 20 minutes, then uncover it and let it bake a little longer until the cheese on top gets deliciously golden-brown.


While the loaf is in the oven, it’s the perfect chance to make some of these homemade mashed potatoes to go with it. It’s another secret family recipe, so don’t tell anyone (actually, tell everyone, because they’re delicious). Some chive and onion cream cheese to the potatoes while they mix with butter is the perfect addition for some added flavor, just as an accent without overdoing it.


 

When these are all set, heat up some Sno Pac mixed veggies and serve it all up together. It’s the perfect complete meal for the whole family, with proteins, carbs, and veggies all on one delicious plate! Ingredients

  • 1 lb Halal 80/20 ground beef
  • 1 lb Halal 93/7 ground beef
  • ½ cups breadcrumbs
  • 2 tbsp Hamburger seasoning + more as needed
  • ½ tsp black pepper
  • 2 eggs
  • 1 lb shredded cheddar
  • Fresh Spinach
  • Sno Pac mixed vegetables, for serving
  • 2 ½ lbs golden potatoes, peeled and chopped
  • 7.5 oz chive and onion cream cheese
  • 1 tbsp butter
  • 1 tbsp whole milk

Directions

  1. Start boiling the potatoes in a large pot until tender. While the potatoes boil, mix together the beef, hamburger seasoning, breadcrumbs, eggs, and pepper in a mixing bowl until evenly incorporated.
  2. Lay out the beef in a 9x13 casserole dish, spreading out over the bottom and up the sides of the dish, forming a large bowl. Lay out shredded cheddar and spinach in alternating layers in the center of the dish, topping with the cheese. Cover the dish will aluminum foil and bake at 425 degrees for 20 minutes, until the beef is cooked thoroughly.
  3. Remove the foil, and bake for another 10 minutes until the cheese on top is golden-brown. While the meatloaf finishes, add the potatoes, cream cheese, butter, and milk to a stand mixer and mix until the potatoes are smooth and everything is evenly incorporated.
  4. Serve the meatloaf with the potatoes and mixed veggies, and enjoy!
