Veggie and Turkey Bacon Breakfast Strata

A good Breakfast Strata recipe is the perfect meal to make ahead during a quiet weekend! Grab a slice any time during the week and enjoy a complete breakfast in no time. We made a GREAT strata by doing just that, and packed it full of hearty veggies, fluffy eggs, and savory Halal turkey bacon for an awesome breakfast that provides plenty for a hungry family.

 

For our veggies, we went with plenty of zucchini, green bell peppers, sweet onion, and a lot of mushrooms, all sliced and diced into nice pieces so you get a little bit of each in every bite. The mushrooms are always an earthy favorite of mine in recipes, and the green pepper and zucchini elevate what is an otherwise pretty soft, fluffy, and savory recipe with a little bit of crisp texture and fresh flavor that goes so well with the rest of the dish.

But the real star is the Halal turkey bacon. As much as I love our Halal beef bacon for its big punch of beefy bacon flavor, this turkey is a great option that still provides plenty of smokey flavor for the dish, but in a leaner package for those looking for a healthier breakfast. This whole recipe is a great way to get a lot of vitamins, protein, and carbs for the day, so do your heart a favor and treat it to some leaner turkey every once in a while.

The recipe assembly comes in two parts, this veggie and bacon mixture, and the egg mixture later to tie it all together before assembling it in a baking dish. The veggies and bacon get cooked in a pot until they soften up and the mushrooms and zucchini release a lot of their liquid.

When you remove the veggies from the pot, you can save this liquid and use it as a broth in other recipes, it’s delicious! It’s all the concentrated flavor of the veggies with the awesome smokey bacon flavor that would be a shame to throw out, so put it to use in a soup that needs a big punch of flavor.

 

The second half of this recipe is the egg mix, and it’s a simple blend of cream cheese, half-and-half, and of course, plenty of eggs all mixed together. By their powers combined, along with the tender veggies, a few cups of cubed whole-grain bread, and of course some shredded cheese, this is shaping up to be a very tasty breakfast casserole.

Spread all of this in a casserole dish (or two) and toss in the oven until a knife can be inserted in the middle and come out without any eggy residue. This recipe makes a ton of strata, we had plenty for the whole office for everyone to snack on the next day, so if you’re feeding a family of 4 or more, or are entertaining a bunch of guests for brunch, this is your recipe!

 

There isn’t much to it! Like I said up top, this is a fantastic option to make on a Sunday for the coming work week, so you can grab a slice in the morning, heat it up, and get a quick, complete, and delicious breakfast that’ll have you feeling great. They say it’s the most important meal of the day, so do yourself a favor and get the most out of it that you can with the fresh and flavorful ingredients packed into this recipe!

Ingredients

  • 2 packages Halal Turkey Bacon
  • Dense loaf of whole grain bread
  • 3 zucchini
  • 2 green bell peppers
  • 2 sweet onions
  • 4 cups mushrooms
  • 3 tbsp neural oil
  • 12 eggs
  • 2 8 oz blocks cream cheese, softened
  • ½ cup half-and-half
  • 3 cloves garlic, diced
  • 12 oz shredded cheddar
  • 1 tbsp salt
  • 1 tbsp pepper

Directions

  1. Start by slicing the whole grain bread into inch pieces until you have about 4 ½ cups of cubes then lay this out on a sheet pan overnight, or in front of a fan for a few hours. Slice 2 packages of Halal turkey bacon into small pieces and set it aside. Chop 3 zucchinis and 2 green bell peppers into 1 inch pieces, finely dice 2 sweet onions, then slice 4 cups of mushrooms into thin slices and set this all aside.
  2. Heat up 3 tbsp of neutral oil in a Dutch oven over medium heat then mix in the veggies and turkey bacon. Mix and cook them until the veggies soften and release a lot of their liquids, then remove the mixture from the pot with a slotted spoon. The leftover liquid can be reserved and used as a broth for other recipes as well!
  3. Lay the veggie mixture out on a baking sheet and pat it dry, or leave it in front of a fan. In a mixing bowl, combine 2 8 oz blocks of softened cream cheese, ½ cup of half-and-half, and 12 eggs and whisk it all together until smooth.
  4. Combine the veggie mixture, egg mixture, bread cubes, 3 cloves of diced garlic, 12 oz of shredded cheddar cheese, and 1 tbsp each of salt and pepper in a large mixing bowl.
  5. Pour the mixture into casserole dishes, leaving about 1 inch of space on top for them to expand a bit as they cook, then bake at 350° for 1 hour, or until a knife can be inserted in the middle and come out clean. Then serve and enjoy!
