Jalapeño Popper Burgers and Elote Corn Salad

It’s been a hot summer already, and we’re turning up the heat even more by revisiting an old favorite of ours with these Halal Jalapeño Popper Burgers! It’s a juicy grilling recipe that combines the flavors of the spicy appetizer favorite with a tender Halal burger you can make however you want and it’ll always be good! But this time we also wanted to include something cool and refreshing that’s just as flavorful, so we also made a quick, tasty, tangy, and creamy elote salad.

 

The popper filling for the burgers is what really sets this apart from the standard seasoned beef burger recipe. It’s a simple combination of diced jalapeño, we diced some of Midamar’s Halal beef bacon too for some extra smokiness, shredded cheese and a few seasonings all mixed together in cream cheese.

If you aren’t looking for too much spice, you can always scoop out the seeds of the peppers. That way you can keep a little bit of their natural spice, but with more of a focus on their crisp refreshing flavor.

 

For the burger patties themselves, we used a combination of Midamar’s Halal 80% lean and 93% lean ground beef options. The fats from the 80% provide plenty of beefy flavor we love from a burger but combined with a leaner beef that keeps it from being too greasy by the end.

You’ll want to flatten this into very thin patties, flatter than you would for your average burger because you’ll actually be using two of these thin patties per burger with a small handful of the filling sealed between. Then they go out for a quick trip to a hot grill until they reach 160° internally.

 

Tempting though it may be to dive into these burgers now, let them rest for just a little bit and it’s the perfect time to whip together the elote salad. We used Sno Pac’s organic frozen corn, just to be ultra convenient, it just needs heated up then combined in a mixing bowl with the seasonings.

This is packed full of flavor just like the burgers, with a ton of tangy Latin flavor from lime zest and juice, chili powder, and cotija cheese. And it’s super cool and refreshing from the combination of mayonnaise and crema mixed throughout tying it all together.

After that, keep it cool and build your burgers however you want! Even make one with the elote ON the burger if you want (I did, and it was delicious)!

 

Just like the combination of jalapeño poppers and burgers, these burgers and elote are the perfect complementary pairing. The burgers are savory and just a little spicy, then the salad comes in and is cool and refreshing, with its own citrusy twist that offers something new. Together I think these are the perfect pair of summer recipes for an incredibly tasty cookout that’s just the thing for impressing hungry guests with a few dishes that are actually incredibly easy to make, and even better to enjoy.

Ingredients

  • 1 lb Halal 80% Lean ground Beef
  • 1 lb Halal 93% Lean ground Beef
  • 1 package Halal beef bacon
  • 4 jalapeños
  • ½ cup shredded cheddar
  • ½ cup shredded pepperjack
  • ½ tbsp pepper
  • ½ tbsp salt
  • 4 oz reduced fat cream cheese
  • 1 ½ tbsp burger seasoning
  • Buns, for serving
  • Fries, for serving
  • 2 packages of Sno Pac organic corn
  • Juice from 1-2 limes
  • Zest from 1-2 limes
  • 1 tbsp paprika
  • 1 tbsp chili powder
  • 1 large clove garlic, diced
  • 1 tbsp salt
  • ½ cup mayonniase
  • ½ cup crema
  • ½ cup cotija cheese

Directions

  1. Pan fry the Halal beef bacon over medium heat to your desired crispiness, then remove it from heat and finely dice it into small pieces. Deseed and dice the jalapeños. Leave the seeds in for spicier burgers.
  2. Add the beef bacon, jalapeños, shredded cheddar and pepperjack, pepper, salt, and cream cheese to a mixing bowl and mix until everything is evenly distributed, then set it aside.
  3. Mix the 80% and 93% lean ground beef in a large bowl until combined, then add the burger seasoning OR you can use about ½ tbsp each of garlic powder, onion powder, and paprika then mix it in. Once mixed, remove about a tbsp of ground beef and pan fry it until cooked to taste test it and adjust your seasoning before committing to the rest of the recipe.
  4. Flatten the beef into 16 thin patties, then add a small handful of the filling to the center of one, and top with another patty, then press together the edges to seal the burgers closed. Repeat this with the remaining patties until you have about 8 full burgers.Gently press small dimples into the tops of the burgers with your fingers, this will keep the burgers from shrinking up and curling when you grill them.
  5. Grill the burgers over medium-high heat on both sides until they’re cooked thoroughly and reach 160° internally, then remove them from heat to rest while you prepare the elote salad.
  6. Microwave the corn according to package instructions, then mix together the corn, juice of 1 lime, the paprika, chili powder, garlic, zest of 1 lime, salt, mayonnaise, crema, and cotija in a mixing bowl, then taste test for seasonings. We ended up adding the juice and zest from 1 additional lime and another ½ tbsp chili powder. When it tastes how you like it, set it aside and refrigerate until use.
  7. Build your burger with your favorite toppings, serve them alongside the elote salad, and enjoy!
