We’re no strangers to an amazing soup recipe, we’ve been making them for weeks here so that you have enough hot and tasty recipes to fall back on this Fall and Winter. We’ve made everything from hearty Chicken and Dumplings to flavor-packed beef and bean Chili and now we’re adding to the arsenal with this Curried Pumpkin and Lamb Stew! It’s an awesome mix of Fall flavors all in one tasty pot that adds just a bit of variety to your cold-weather cooking.
Jumping right in, we used Midamar’s Halal ground lamb for this, and I was amazed at how well it went with the mix of veggies and seasonings. We used the ground lamb for a nice even mix of meat throughout the stew, but this would also be great with larger chunks of lamb or beef stew meat, or even ground beef if lamb isn’t your speed.
If meat in general isn’t your speed, then this still makes for a very tasty stew with a hearty blend of tasty veggies like onion, red pepper, corn, tomato, beans, and of course, pumpkin. We even made it with a vegetable stock, so with a few minor adjustments, this is a great hearty recipe no matter the dietary restrictions. I love hearty and savory stew, so a blend of this many tasty veggies all in one dish wins a lot of points with me, and each is so deliciously tender and smells amazing as you get everything cooking.
In the process of preparing the pumpkin, you’ll also end up with the seeds you scoop out from the center, and these happen to make for the perfect topping for this stew! If you dry them out under a fan, then drizzle them in some olive oil with a few seasonings, they can be tossed into the oven and baked for a deliciously crispy topping or savory snack. They bake for about an hour so you can get these going while you finish the stew, as that will also simmer for an hour for all the flavors to come together in the pot.
We wanted to add a little flavor variety to what you might expect from a Fall soup or stew, so when it was done simmering, we added garam masala for a little kick of curry flavor at the end. Don’t be afraid to give this a taste before serving and adjust your seasonings as needed, particularly with the salt and pepper. You spent this long making the stew, so we want you to get the most flavor you can out of it.
This stew really surprised me and in a great way. I’m not always the biggest fan of lamb, I admit, but it tastes amazing in this with the blend of veggies and seasonings. It’s the kind of savory stew that begs to be enjoyed during Fall and is thick enough to satisfy and keep you full of juicy lamb and fresh veggies. Like any good recipe, this makes plenty, so you and the whole family can all enjoy seconds and still have leftovers to enjoy later.
