Grandmas Quick and Tasty Beef and Lentil Stew

There’s something about a good stew that will always be comforting, about all your favorite ingredients all together in one hot and tasty bowl. We’re coming at ya’ this week with our take on a quick, easy, hearty, and oh-so-delicious Beef and Lentil Stew, straight from the family cookbook passed down for generations, so you know it’s good.


Like any good stew, there isn’t much in the way before you’re ready to get cooking, we just chopped some golden potatoes and yellow onions into small pieces for later. This is one you can adapt to your own taste, we used golden potatoes, but some nice red potatoes would be delicious in this as well, along with any of your other favorite veggies like carrots or celery.


Once you’re cooking, you don’t need to stop until it’s all done, and all you need is a large pot or Dutch oven. We used Midamars Halal beef stew meat which works perfectly for this. It’s precut into chunks saving you a step during the prep, or you can use Midamars Halal lamb stew meat, goat cubes, or even a chuck roast for this.


Brown the beef and the onions in the pot before adding in a healthy amount of beef stock and let them simmer for a bit. Then toss in the potatoes and lentils to simmer for a while longer before seasoning it to your taste with salt and pepper.

We kept the seasoning simple, just to better accentuate the natural flavors of the beef, potatoes, and lentils. This is a simple, savory, and earthy stew and we wanted to keep it that way for that classic, homestyle taste. The lentils will absorb a lot of the broth as they soften, so you may need to add some more to get the stew a little soupier, so if you do, adjust the seasoning accordingly and you’re ready to serve.

Ingredients

  • 2 lbs Halal beef stew meat
  • OR 2 lbs Halal lamb stew meat
  • 2 ½ lbs golden potatoes, chopped
  • 2 yellow onions, diced
  • 2-3 tbsp olive oil
  • 2 cups water
  • 4-6 cups Halal beef stock,
  • 2 cups green lentils
  • Salt and Pepper, to taste
  • 2 tbsp butter

Directions

  1. Add the olive oil to a large pot or Dutch oven over medium heat, then add the beef and diced onions. Mix until the onions have softened and the beef is browned.
  2. Pour in the water and 4 cups of the stock, then bring to a simmer for 20 minutes. Add in the lentils and the diced potatoes, then cover and let simmer for 15-20 more minutes, stirring occasionally.
  3. Season with salt and pper to your taste, or about 1 tsp each, and add more broth if needed to make the stew looser. Mix in the butter and adjust the seasoning accordingly, serve and enjoy.
