The Easiest Decadent Apricot Stuffed Cornish Hens

It isn’t hard to enjoy a deliciously decadent dinner when you have these Halal Apricot Stuffed and Glazed Cornish Hens ready to serve. For larger birds like whole turkeys or whole chickens even, food safety suggests not cooking the stuffing inside as the outside of the poultry might be safe, but the internal stuffing may not get hot enough to be safe.


Lucky for you, these hens are small enough that a trip to the oven for a few hours will get everything hot enough to be safe and the stuffing inside, while delicious on its own, gets infused with that juicy hen flavor and is made even better. Just before the hens are done in the oven, whip up the glaze by combining apricot preserves and vinegar in a pan over medium heat and whisk it up until it’s a smooth jelly, then paint it over the top of the hens. These come out so deliciously golden brown the first time, it can be tempting to take a bite but trust me, the glaze is what ties the whole thing together and comes out even more amazingly golden when it’s finished. It’s like eating an art piece, but tastier.



Let’s see, the hens are juicy, tender, and delicious, the glaze is the perfect sweet compliment, and the stuffing is the perfect hearty base that ties it all together, but you may think it’s still missing a veggie for the perfect complete meal, and you’d be right. Ingredients

  • 4 Halal Cornish Hens
  • 1 package organic broccoli
  • 2 tbsp melted butter
  • ½ yellow onion, diced
  • 1 cup mushrooms, sliced
  • ½ cup dried apricots, diced
  • 1 tbsp parsley, chopped
  • 3 tbsp butter
  • ¾ cup chopped pecans
  • ¼ tsp cayenne pepper
  • Salt and pepper, to taste
  • 3-4 cups cooked wild rice
  • ½ cup apricot preserves
  • 1 tbsp white vinegar
  • ½ cup sour cream
  • 4 tbsp milk
  • 1 tsp lemon juice
  • Zest of 1 lemon

Directions

  1. Start the stuffing by melting 3 tbsp of butter in a pan over medium heat, then add the onion and mushrooms with the pecans and mix until the onion and mushrooms soften. Add the parsley, cayenne, apricots, the cooked wild rice, and salt and pepper. Give it all a mix and give it a taste to adjust for seasoning. Then remove from heat. Set aside half of the stuffing for serving on the side later.
  2. Pat dry the Cornish hens with a paper towel, the add a few large spoons of stuffing to the cavities, then tie up the legs of the hens with kitchen twine. Lay them out on a lined baking sheet coated in nonstick spray and brush the outsides of the hens with 2 tbsp melted butter.
  3. Bake the hens at 350 degrees for 2 hours. In the last 20 minutes, mix together the glaze in a pan over medium heat until smooth then brush over the hens and return them to the oven for another 20 or so minutes, until the exterior reaches 180 degrees and the stuffing reaches 165.
  4. As the hens finish cooking, mix together the lemon cream sauce in a pan over medium heat until smooth, then serve with the broccoli, hens, and rice stuffing.
