Huevos Rancheros Skillet Made Halal

Buenos Dias! We’re always excited to bring you a delicious Halal recipe, and we have a Halal Huevos Rancheros Skillet for you that we think you would love to get out of bed for. It’s jam packed full of fresh veggies, runny eggs, and our version of a zesty Halal chorizo made with Midamar’s Halal breakfast sausage links.

Huevos Rancheros, or Rancher’s eggs is a favorite recipe when I think of Mexican cooking. I love a fresh pepper, so the base of this recipe being jalapeño and poblano peppers with plenty of tomato and onion already sounds good. Add in the spices, chorizo, and egg all on a golden-brown corn tortilla and I am absolutely in.

Chorizo may not be what comes to mind when you think Halal, but now it can be because we made an amazing version of it. Midamar’s breakfast links are incredibly versatile for all kinds of breakfast recipes. In this case we squeezed the sausage out of the casing and mixed it together with a few choice spices like chili powder, cumin, and paprika to name a few. It’s zesty, it’s smoky, and it’s amazing when it’s all cooked up.

 

This is a great recipe for playing around with the flavor to your taste. When preparing the jalapeños, we left the seeds in for a little kick of spice; this recipe makes a lot, so it didn’t end up being too spicy in the end, but if spice isn’t your thing then feel free to remove those seeds when you’re chopping up the peppers.

 

Like all good skillet recipes, when you get cooking, it’s all going to the same place. When the veggies are softened, large can of tomatoes WITH the juices, we don’t want to skip the tomato flavor, and you’ll need that moisture for everything to simmer together. This makes a base of fresh veggies that smell incredible as they cook and soften and all get to know each other.

Then when you add in the cooked chorizo it’s all the better, it’s tempting to dive in and enjoy before it’s ready, but it’s worth it to wait until the end. Let this all come together in the skillet and cook down a bit, ours ended up being about the consistency of chili, that allows you to dig a few wells in it with a spatula and it will somewhat hold its shape.

This is where your all-important eggs come in, the titular huevos that tie it all together. Crack a few of those bad boys into the simmering skillet and let ‘em cook. We covered it with a lid to help cook the tops of the egg, and when they’re set, then you’re set! Enjoy this all together with some avocado, onion, maybe some cilantro and lime juice, and on a crispy fried corn tortilla and you’ve got yourself a breakfast you’ll want to enjoy all day!

This recipe was just my kind of thing. I love a good bowl of delicious things that I can dig into all together, and not only is this skillet exactly that, it’s absolutely packed to the top with flavor. The peppers are fresh and spicy but not too spicy, the tomato have a refreshing tanginess that’s great with the smokiness of the Halal chorizo. All of this served with eggs and on a crispy tortilla? Yes please.
