Southwest Omelettes Are The Perfect Breakfast

Rise and shine for the ultimate breakfast recipe! We understand it can be hard to get up and out of bed in the morning, but maybe you’ll be more motivated when you know you have this incredibly tasty and convenient Southwest Omelette recipe waiting for you. There’s nothing like a blend of fresh veggies and savory Halal beef bacon all wrapped up in tasty egg to get you ready to take on the day.


This is a great straightforward recipe, just cook some bacon while you dice a few veggies. It’s perfect for weekends when you can have breakfast a little later or you can prep everything you need the night before, then assemble it all in a pan in the morning and you’ll have a delicious breakfast in no time.

We used a blend of onion, jalapeño, tomato and avocado along with Midamars always delicious Halal breakfast beef bacon. The choice of veggies is also a great way for you to play around with this recipe a little; if you like heat, leave in the jalapeño seeds for a little kick, otherwise you can scoop ‘em out and you can have the fresh pepper taste without the kick.

Your choice of bell peppers would also be delicious mixed in as well if you want to skip the spicy entirely and enjoy fresh veggie flavor first thing in the morning. It may not be very Southwest inspired, but I always like a bit of spinach in my eggs, and it always feels good to enjoy something healthy at the start of the day.


Building the omelette couldn’t be easier, lay out a layer of whisked eggs in a pan, get them cooking, then add your veggies to one side when the eggs are nice and solid then fold it over. Simple! The two cherries on top of this recipe are the freshly shredded Monterey Jack cheese mixed in (because who doesn’t love melty cheese) and top the finished product with some salsa to tie it all together.


They say it’s the most important meal of the day, so why let it be boring? These omelettes are absolutely delicious, they couldn’t be easier to make, and a little bit goes a long way. Our recipe will provide enough for two massive omelettes, but if you want a lighter portion or have hungry mouths to feed, then get these cooking in a smaller pan and you can have 4 plates ready in no time.
