Swedish Kebab Pizza

If you imagine the home of delicious pizza recipes, you might imagine the blue Mediterranean and sunny hills of the Italian countryside. And if you’re like me, you certainly didn’t imagine Sweden to be the place cookin’ up their own version of the Italian classic; but they did, and they absolutely crushed it with the uniquely Swedish and entirely delicious Kebab Pizza!

If you’re unfamiliar, again, much like I was, it’s the same delicious classic dish but with a few key additions, namely the spiced Kebab meat topping and fresh veggies. Though it’s homeland might be unexpected, Kebab Pizza is the perfect fusion of two different Mediterranean staples that’s like having a delicious Kebab wrap, but on a slice of the Italian classic.

 

If you shoot for simplicity, you can build these pizzas on a premade pizza dough just how you would any other pizza. We made our dough from scratch, and it always tastes better to make it yourself, and letting the dough rest gives you the chance to prepare the sauces and toppings to go on the pizza later.

 

As for toppings, it isn’t a kebab pizza without, you guessed it, seasoned kebab meat! We also went with a couple of tasty options with Colonel Kababz Beef Seekh Kebabs and Midamar’s Gyro Slices. They both come pre seasoned and are simple to prepare, we just chopped them both up with veggies for topping and let them cook on top of the pizza. Simple as!

For the rest of the toppings, we used chopped tomato, red onion, lettuce, and cucumber. These are a surprise hit for me as pizza toppings, it makes each slice taste like a delicious kebab or gyro wrap, but with tangy pizza sauce too. The Swedes were onto something with this flavor combo; I was a big fan.

 

And evidently, a hotly debated point among fans of kebab pizza is what sauce goes best over top. Some parts of Sweden use a garlic sauce, while others use a tangy pink sauce that’s a blend of yogurt, sriracha, orange soda, and a few other ingredients. We made two different pizzas, so each could get one of these drizzled over top.

And the final, crucial piece of this pizza party is the Swedish pizza salad that’s served as a side. It’s a simple salad, but no less important to pizza culture over there, so, for authenticity, we had to throw one together. It’s an easy blend of shredded cabbage, vinegar, olive oil, oregano, and some other ingredients that go great with these pizzas.

I always think a side salad with anything is a nice little addition to help break up the flavors as you eat, and you can toss this together at the start and let it marinate while you make the pizzas.

 

When the crust, topped with pizza sauce, cheese, and your choice of meat is all cooked up, melty, and delicious. Top it with the chopped veggies, your choice of sauce, and a final, zesty little pepperoncini and you’re ready to grab a slice.

Like I said up top, it really is all the best parts of a melty slice of pizza with the flavors of a fresh gyro wrap all in one. A personal favorite of mine was the gyro meat pizza topped with the garlic sauce, but I knew going in that I was going to like anything with that garlic sauce.

Ingredients

  • 4 cups all purpose flour
  • 2 tbsp sugar
  • 2 tsp salt
  • 2 tsp active dry yeast
  • 1½ cups warm water
  • 2 tbsp olive oil
  • 20 oz tomato sauce
  • 3 cloves diced garlic
  • 1 ½ tbsp oregano
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup sour cream
  • ¼ cup mayonnaise
  • 3 tbsp diced garlic
  • 1 tbsp lemon juice
  • ¼ tsp salt
  • ¼ tsp white pepper
  • 1 ½ cup Turkish Yogurt
  • ½ tsp paprika
  • 1 tsp cayenne
  • 1 tbsp Heinz chili sauce
  • ½ tbsp sriracha
  • ½ tbsp sambal oelek
  • 1 med clove garlic, grated
  • 1 tbsp minced Boston cucumber
  • ½ cup orange soda
  • 1 large cucumber, sliced
  • ½ red onion, sliced
  • 1 large tomato, diced
  • Pepperoncini
  • Sliced lettuce
  • 1 package Beef Seekh Kabab, sliced
  • 1 package Beef and Lamb Gyro Slices, sliced
  • ½ medium head of cabbage, sliced
  • 1 tsp salt
  • ¼ cup white vinegar
  • 3 tbsp olive oil
  • 1 tbsp oregano
  • 1 tsp basil
  • 2/3 tsp black pepper
  • 1 tbsp sugar
  • Pinch of red pepper flakes

Directions

  1. Start the dough by combining the flour, sugar, salt, and yeast in a mixing bowl, then set this in a stand mixer with a dough hook and pour in the warm water. For reference, the water should be about 110° F.
  2. Mix this on low speed to get the flour mixed in, periodically wipe down the sides with a spatula to scrape up any dough that’s stuck to the sides. Mix in the olive oil and start to gradually increase your speed, mixing the dough until it forms a ball.
  3. Sprinkle a work surface with flour to prevent the dough from sticking, then knead the dough with your hands until it begins to feel less sticky. Then oil the inside of a large bowl and set the dough inside, cover the top with plastic wrap and set aside for 1 hour until it doubles in size.
  4. For the pizza sauce, combine the tomato sauce, garlic, oregano, salt, and pepper, in a pan over low heat. Then mix and simmer until it thickens. Give it a taste test and adjust your seasoning as needed before removing it from heat.
  5. For the garlic kabab sauce, combine the sour cream, mayonnaise, diced garlic, lemon juice, salt, and white pepper in a mixing bowl and whisk it all together until combined. Taste test this and adjust your seasonings as needed.
  6. For the Spicy Kabab Sauce, combine the yogurt, paprika, cayenne, chili sauce, sriracha, sambal oelek, grated garlic, grated cucumber, and orange soda in a mixing bowl and whisk it all together until combined.It may be thicker if your using Greek yogurt, so add water to loosen it and adjust your seasonings as needed.
  7. Prepare your toppings by slicing 1 large cucumber into diagonal medallion shaped pieces. Slice the half onion down the middle, then slice it into very thin slices. And finally, dice the tomato into small pieces.
  8. Start preparing the pizza salad by thinly slicing half of a small head of cabbage, either with a knife or mandolin set to 2mm cuts, into a fine slaw. Then mix this in a mixing bowl with 1 tsp of salt and set it aside. This will draw some of the water out of the cabbage.
  9. Cut the dough into two evenly sized chunks, then roll these into 2 even balls, cover with plastic wrap again, and set aside for 30 minutes.
  10. In a mixing bowl, combine the cabbage, white vinegar, olive oil, oregano, basil, black pepper, sugar, and red pepper flakes until everything is mixed together, then set it aside until you serve it with the pizzas.
  11. Slice 1 package of beef seekh kebabs and one package of Halal gyro strips into small pieces. Then flatten out the dough balls on pizza trays into wide circular crusts. Oil the dough with a little olive oil, then par bake them at 450° for 5 minutes, just enough time for them to rise a bit and keep their shape.
  12. Spread the pizza sauce over each crust, then top it with shredded mozzarella, and your choice of kabab or gyro, then bake them at 450° for 10-15 minutes until the cheese is melted and the meats have crisped a bit.
  13. Remove the pizzas from the oven and top with shredded lettuce, tomato, onion, pepperoncini, and your choice of sauce drizzled over top, then serve them with the salad and enjoy!
