If you can’t choose between a bowl of tender pasta or hot and tasty soup, now you don’t have to with this Chicken Tortellini Soup! We’re no strangers to a Pasta-Soup combo, we have a delicious Ravioli Soup with our Halal meatballs here, so we wanted to add another tasty addition to our recipe list with another perfect soup season favorite we think you’re going to love.
This is a great busy-night recipe to throw into the pot after a long day so you can unwind for a while as hearty veggies, Halal chicken, and savory broth all simmer together with minimal preparation up front. Chop up a few veggies, season and cook the chicken in the pot, then you can start assembling the soup.
Taking the time to cook the chicken first also lets you build up a tasty layer of fond on the bottom of the pot that you can deglaze with the broth, maximizing that chicken-y goodness. If you get the opportunity to use your fond in a recipe, don’t skip it! We are fond of the fond.
When you get to simmer the veggies, carrots and celery are hearty veggies and take a little bit of time to get tender, so that gives you a chance to dice up your chicken and toss it back in to simmer with the aforementioned veggies and a can of diced tomatoes and its juices. I would say you could get a jump on the dishes while this simmers, but this recipe makes almost none, we love a single big pot recipe!
You may be asking yourself, “Where’s the tortellini come in?” and I’ll tell you: It comes in right about now. Give the soup a little taste to adjust your salt, pepper, and Italian seasoning while you’re at it. As you may be aware, astute reader, pasta famously has to simmer in a hot liquid to get nice and tender, and that’s why a pasta soup is such a dynamic duo, it is mostly hot simmering broth.
It doesn’t take much before these are puffed up and ready to enjoy, but before you do, toss it a handful or two of fresh spinach and let it wilt down before you dive in. Sprinkle some freshly shredded parmesan over top when you do, enjoy it with some nice bread, and you’ve got yourself an amazing meal.
I was incredibly excited about this recipe, our Ravioli Soup recipe is near and dear to my heart, so I had high hopes for this and it did not disappoint. In fact, it even exceeded my lofty expectations. It’s hard to go wrong with a good soup this time of year, but the juicy chicken, hearty veggies, and of course, always satisfyingly tender tortellini all in one amazing bowl is going to be a recipe I crave year-round, I can already tell.
